- 2 cups gluten-free flour
- 1 cup diced peaches (fresh or frozen)
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/2 cup coconut sugar
- 1 cup grated zucchini
- 1/2 cup unsweetened applesauce
- 1/3 cup melted coconut oil
- 1 teaspoon vanilla extract
For the Streusel Topping:
- 1/4 cup gluten-free flour
- Pinch of salt
- 1/4 cup coconut sugar
- 2 tablespoons melted coconut oil
- 1/4 teaspoon ground cinnamon
Directions:
Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners. In a mixing bowl, whisk together the gluten-free flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg.
