Gluten-Free, Vegan, Serves 4
- 1 1/2 cups radish diced
- 1/2 cup Parsley finely chopped
- Juice of 1 Lemon
- 1/2 Lime juiced
- Salt and Pepper to taste
Directions:
Into a bowl combine all the ingredients and toss well.
Strawberry Shortcake Ice Cream
Gluten-Free, Vegan, Serves 8
- 3 cups full-fat coconut milk
- 16 ounce strawberry jam (sugar-free)
- 2 tsp pure vanilla
- 6 ounce vegan white chocolate chopped
- 1 Tbsp coconut oil raw
- 2 cups freeze dried strawberries
- 1 cup brown rice crisps
- 1/2 cup frozen strawberries
Directions:
Combine milk, jam, vanilla, and frozen berries in a blender. Evenly distribute into eight popsicle molds or pour into a large freezer-friendly container. Freeze for 2-3 hours. Melt the white chocolate with coconut oil using a double boiler. If you are doing the popsicles, dip the bars into the chocolate and top them with crushed strawberries and rice crisps. For the large container, stir in the chocolate and toppings while the ice cream is still setting.
Strawberry Bread
Gluten-Free, Dairy-Free, Serves 10
- 3/4 cup coconut sugar
- 1/2 cup coconut Full-Fat milk
- 1 large egg
- 1/2 cup coconut oil
- 1 tsp pure vanilla
- 2 tsp baking powder
- 1 1/2 cups coconut flour
- 1/2 cup almond flour
- 2 cups diced strawberries
- 1/4 tsp sea salt
- 2 Tbsp Almond flour
Glaze:
- 2 cups powdered coconut sugar
- 1/3 cup diced strawberries
- 2 Tbsp vegan butter
- 1/2 tsp pure vanilla
- 2 Tbsp coconut cream
Directions:
Preheat the oven to 350 degrees F. In a medium bowl, stir together the sugar, milk, oil, egg, and vanilla. Combine the flour, baking powder, and salt in a separate bowl. Add the dry ingredients to the wet, stirring until just combined. In a small bowl, toss the strawberries in 2 Tbsp flour before folding them into the batter. Pour the batter into a 9×5 inch bread pan that has been pretreated with your non-stick option of choice. Bake for 50-60 minutes or until a toothpick comes out clean. Allow the bread to cool for 10 minutes before removing it to cool completely on a wire rack. In the meantime, prepare the glaze by combining all the ingredients and mixing until it is smooth. Once the bread is cooled, pour the glaze over the top, slice, and serve.
Spicy Sesame Chicken Ramen
Gluten-Free, Dairy-Free, Serves 4
- 1 1/2 pounds chicken breasts
- 1/4 cup & 2 Tbsp coconut amino
- 3 Tbsp & 2 tsp honey
- 2 Tbsp gluten-free fish sauce
- 1 Tbsp chilie sauce
- 6 low sodium chicken broth
- 1 Tbsp sesame oil
- 8 slices fresh ginger
- 1 cinnamon sticks
- 4 garlic cloves minced
- 2 star anise
- 1 jalapeno seeded and sliced
- 2 cups chopped kale
- 8 ounces rice noodles
- 2 cups bok choy
- 1 cup bean sprouts
- 2 limes juiced
- 1 yellow onion quartered
Directions:
Preheat the oven to 425 degrees F. Toss the chicken with 2 Tbsp coconut amino, 1 Tbsp fish sauce, 1 Tbsp honey, chilie sauce, and sesame oil. Place the chicken onto a pre-treated baking sheet with a non-stick option of choice. Bake for 15 minutes, remove, and toss in 2 more Tbsps of honey. Transfer the bake to the oven and bake for another 5-10 minutes. Remove the chicken and shred it. Turn the oven to broil and broil the chicken for 1-3 minutes or until caramelized.
In a Dutch oven, combine the broth, 1/4 cup coconut amino, 1 Tbsp fish sauce, 2 Tbsp honey, onion, ginger, garlic, star anise, cinnamon, and jalapeno. Bring to a boil over high heat, then reduce to a simmer for 15 minutes. Just before serving, stir in the greens and season to taste. Cook the noodles as directed on the package. Drain and divide into bowls. Add the chicken, and pour the broth over the top. Arrange the herbs, sprouts, and any other desired toppings (I suggest a soft-boiled egg). Squeeze lime juice over the top and enjoy!
