Gluten-Free, Vegan, Serves 6
- 1 pound Brussels sprouts shredded
- 1/2 cup dried cranberries
- 1 apple thinly sliced
- 1/2 cup walnuts
- 1 pear thinly sliced
- 2/3 cups vegan feta
Dressing:
- 2 Tbsp white wine vinegar
- 1 small shallot minced
- 3 Tbsp lemon juice
- 4 Tbsp avocado oil
- salt and pepper to taste
Directions:
Blend all dressing ingredients together and set aside. In a large bowl, combine all ingredients for the salad and either toss in the dressing or leave it on the side.
