Gluten-free, Vegan, Serves 4
- 6 cups arugula
- 1 avocado pitted and cubbed
- 1/2 red onion diced
- 2 cups grapes halved
- 1/2 cup vegan feta
- 1 cup walnuts chopped
Dressing:
- 1/3 cup olive oil
- 3 Tbsp balsamic vinegar
- 1/4 tsp sea salt
- 2 Tbsp date syrup
- 1/8 tsp black pepper
Directions:
Into a small bowl combine all the ingredients and mix well. Using a large mixing bowl toss all the remaining ingredients and pour the dressing over the top.
