Gluten-Free, Vegan, Serves 4
- 2 Chicken Flavored Bouillon Cubes Vegan
- 8 Cups of Water
- 1/4 Cabbage Large chopped
- 1 Carrot Large diced
- 2 Celery stalks diced
- 3 Garlic cloves minced
- 1 White Onion minced
- 1/2 Cup Parsley
- 1 Tbsp Olive Oil
- 3/4 Cup Mushrooms Sliced
- Salt and Pepper to taste
Directions:
In a large soup pot, heat oil, onions, celery, carrots, and garlic. Once the onions start to become translucent, add in water, bouillon cubes, mushrooms, and cabbage. Bring to a boil and cook for one minute. Reduce heat to a simmer and cook for another five minutes. Add in remaining ingredients and cook for another 5-10 minutes or until vegetables are tender (the smaller you cut them, the faster it will cook).
