Cucumber Salad

Gluten-Free, Vegan Serves 2

  • 1 English cucumber cubed
  • 2 cups cherry tomatoes sliced
  • 1 avocado cubed
  • 2 Tbsp Basil chopped
  • ½ cup vegan mozzarella cubed
  • 2 Tbsp Balsamic Vinegar reduction

Directions:

In a large bowl combine all the ingredients listed above except for the vinegar reduction. Spoon out your portions and top with the reduction.
