Gluten Free Vegan Serves 24
Ingredients:
- 2 cups Frozen Spinach chopped & thawed
- 6 oz Artichoke Hearts Drained & chopped
- 1/2 tsp Garlic minced
- 2 Tbsp Vegan Parmesan
- 4 oz Vegan Cream Cheese softened
- 3/4 cup Cashew Cheese shredded
- 1/2 tsp Garlic Salt
- 1 Can Gluten Free Vegan Puff Pastry
Directions:
Heat the oven to 375 degrees. In a bowl combine spinach, artichoke, garlic, and parmesan. Blend in cream cheese and half of cashew cheese. Season and set aside. Roll out dough and cut into 2 inch (8×12) squares. Spray or treat the cupcake pan with nonstick. Spoon 1 tsp mixture into each square pulling corners of dough to center bake 15- minute or until golden. Let cool and enjoy!
