Gluten Free, Vegan Serves 8
- 1 Tbsp Vegan Butter
- ¾ Cup Almonds, Blanched and Slivered
- 1 Pound Spinach, Rinsed and Torn into bite-size pieces
- 2 Tbsp Toasted Sesame Seeds
- 1 Cup Dried Cranberries
- ½ Cup Coconut Sugar
- 1 Tbsp Poppy Seeds
- ¼ tsp Paprika
- 2 tsp Minced Red Onion
- ¼ Cup White Wine Vinegar
- ½ Cup Avocado Oil
- ¼ Cup Apple Cider Vinegar
- 2 Apples Cubed
Directions:
In a small saucepan, melt butter and stir in almonds until lightly toasted. Remove from heat and allow to cool. In a medium bowl whisk together sesame seeds, poppy seeds, onion, paprika, vinegars, and oil. Toss greens in dressing and top with cranberries, almonds, and apples.
