Gluten Free Vegan Serves 3-4
Ingredients:
- 11/2 lbs sweet potatoes cubed
- 1/2 cup chopped celery
- 1/2 cup diced red onion
- 2 cups carrots cubed
- 2 Tbs chopped parsley
- 1 Tbs chopped dill
- 1/2 cup vegan mayo soy-free
- 2 Tbs white vinegar
- 1 tsp dijon mustard
- 1/2 tsp. Lack pepper
- 1/2 paprika
- 1/4 tsp cayenne powder
- 1 Tbs coconut oil
Directions:
Roast potatoes and carrots in coconut oil and cayenne powder at 350 f for 20-30 minutes or until tender. Cool and place in large bowl with all other ingredients. Mix well to combine, serve chilled.
